<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Today would have been my mothers 57th birthday. She passed away suddenly and unexpectedly when I was just 17, a few days after Mother's Day and my junior prom. I remember I made her a card with my new cool program on my computer, and she loved it. I also got her a pound of the really nice coffee from the mall, flavored like hazelnuts. That was her favorite. It was quite a gift since I thought $20 was a BUNCH of money back then. </span><br />
<br />
<a name='more'></a><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Well, about a week later she was gone. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">I always remember the dates. Currently I cant ever remember the day it is or what year anything happened (how do people do that?)... but these I remember. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">May 4th- prom. She taught me how to make my corsage and boutonniere out of the orchids we picked out at the florist and the ribbons at the craft store. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">May 12th- Mothers Day. Deliver card, hugs. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Somewhere in between here she was my guest at a banquet at school, some honors thing for good grades. She met my favorite teacher, Mrs. Banks. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">May 18th- she was gone. I found out the next day. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">The last time I spoke to her I called her to ask her why it hurt when I breathed. She said it was costochondritis and explained what that meant (ironically that was our first case in medical school). She told me what to do about it and then we said our I Love You's and Goodbyes. Im so happy that was the last thing I said to her. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">How do you process that? What do you do? One of the worst things possible happens and you think you'll just die... but you dont. You're still there. Alternating between feeling numb and then feeling so out of control with sadness that you wish you were numb again. Cycles like that where the numb interval just keeps getting longer and longer until you are only sad about it maybe twice a year. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">She taught me lots of things via her actions. Things to do and things not to do. How, if one day I have kids, I will have a template to work with. I will always sing "You are my sunshine" and "Jelly bean" to them. I will totally embarrass them via karaoke at their slumber parties, right after I make cookies. I will always say no with a question instead of just saying no. But what do you do with a teenager? Or a baby? How are you supposed to bridge the gap from child to adult to autonomous adult, as a mother? I never did get to see that part. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">There are a few people that I would really have liked for her to meet. Maybe these people would see that my goofiness is from her. My love of medicine is from her. My cheekbones are from her. My need to caretake is from her. My craftiness is from her. How many other things are from her? Lots are from my dad too, and some are just mine. Novel little personality things that aren't from my parents but that are just me. But the rest, I would have liked to know the rest. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">I still dont talk about it with people, because it makes me sad. Im still processing sometimes. </span><br />

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> Need to de-seed a pomegranate but dont want to turn you kitchen in to a bloody murder scene while you rip the pomegranate apart and the red juice flies? Here's a nice way to quickly and efficiently get the seeds out! You dont need <a href="http://farm8.staticflickr.com/7249/7623537670_573fe04156_z.jpg" target="_blank"><b>this</b></a>, or <a href="http://www.amazon.com/Seconds-Pomegranate-DeSeeder-Logistica-Innovation/dp/B0073ROS0G/ref=sr_1_9?ie=UTF8&qid=1354504255&sr=8-9&keywords=pomegranate" target="_blank"><b>this</b></a>, or <a href="http://www.theliveinkitchen.com/wp-content/uploads/2011/12/PomegranateWater.jpg" target="_blank"><b>this</b></a>. Just normal kitchen supplies people!</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> When you are picking out pomegranates, you should look for a smooth surface with no puckering or dry spots, and it should be heavy. This means there is still a lot of water in there and you pomegranate will be delicious. </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> Please dont laugh at my cell phone video: </span></div>
<a name='more'></a><br />
<div class="separator" style="clear: both; text-align: center;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><iframe allowfullscreen='allowfullscreen' webkitallowfullscreen='webkitallowfullscreen' mozallowfullscreen='mozallowfullscreen' width='320' height='266' src='https://www.blogger.com/video.g?token=AD6v5dzHHB-J8nNA5Tw73mpWCseXI1uMQRmydxqjCwc5Eqcd4JS8wd3-MlnoNplb-Eb7m6FvATdFjeJov-tRlK96' class='b-hbp-video b-uploaded' frameborder='0'></iframe></span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> Cut the pom in half sideways (<a href="http://en.wikipedia.org/wiki/Transverse_plane" target="_blank"><b>transverse</b></a> for all you nerds out there). You want to loosely hold the pomegranate cut side down and BEAT the outside with the back of a wooden spoon. It takes a few whacks to get started, and then you just let the seeds fall into your palm and between your fingers into a large bowl waiting below. You will feel when it is empty. So 1 min for this half, and about 1 more min for the other half= 2-2.5 mins to de-seed a pomegranate! Nice. </span></div>
<div class="separator" style="clear: both; text-align: left;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif; font-size: x-small;"><i> *I should note that you should use more of a wrist snap rather than an arm beating like I was doing. When I got to the second half it was more efficient and easier. Just let your wrist get floppy and it should work out. And try not to hit your fingers! </i></span></div>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>

<p>
<font face="Helvetica Neue, Arial, Helvetica, sans-serif">}(document, 'script', 'facebook-jssdk'));</script>For those of you unfamiliar with a CSA, this is a great way to get local veggies! </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">CSA stands for<a href="http://en.wikipedia.org/wiki/Community-supported_agriculture" target="_blank"> Community Supported Agriculture</a>. Long ago when I was getting into healthy eating and discovered<a href="http://www.westonaprice.org/" target="_blank"> Weston A Price</a>, the issue of raw milk and local produce entered my realm. Actually I found out about my local raw milk from my local Price foundation and the raw milk seller told me about a little husband and wife couple who just bought a farm and were starting up a CSA. I had no idea I could have access to this. I mean I know it was around but I didn't know it was so available! Cue my (now) 5th year with a CSA and countless other years before hand going to local markets. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Basically you prepay for a season, here in Florida that's about November through May. Then once a week or once every other week you go to a predetermined site and pick up your veggies.</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"></span><br />
<a name='more'></a><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Here is what I got today: </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">1 head of lettuce, 1 mini watermelon, 1 bunch arugula, 1 bunch purple kale, 1 bunch radishes, turnips and greens (eat the greens!), sungold tomatoes, 2 salad cucumbers, 2 eggplants (italian?), 1<span style="background-color: white; color: #222222; line-height: 16px;"> jalapeño</span>, and a bag of green beans. </span><br />

<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><b>Sources</b>:</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">OHIO (Dayton area)</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Raw milk: <a href="http://www.burnettslandofmilkandhoney.com/" target="_blank">Burnett's Land of Milk and Honey</a></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> I can say that this is the BEST BEST BEST milk I have ever had. They have Jersey cows which gives their milk ~5-6% butterfat and it is incredibly flavorful and rich. It tastes like extra milk flavored milk. think about the difference in taste from skim to whole (lets call that step 1) then from whole milk to organic whole milk (lets call that step 2). Well step 3 is most assuredly organic whole milk to this milk from this farm. Trudy and her family are so kind and I cant wait to get back to OH to get this milk again. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Meats and eggs (and so much more): <a href="http://www.eatfoodforlife.com/" target="_blank">Eat Food For Life Farm</a></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> This whole operation is based around a family farm, and it definitely feels like it! I would place a meat order with Jean through the phone (such a pleasant woman) and pick it up at the <a href="http://www.metroparks.org/Parks/SecondStreetMarket/" target="_blank">Second Street Market</a> or<a href="http://libertymarketofkettering.com/" target="_blank"> Liberty Market</a>. Their meat is all <i>extremely</i> high quality, organic, pastured and heritage! I even had a rare (for the supplier) black boar sausage from there. </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">CSA and eggs: <a href="http://milecreekfarm.com/" target="_blank">Mile Creek Farm</a></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> I had their CSA for 2.5 years before I moved. I was moving right in the middle of it but I dodnt want to miss out so I convinced a friend to take it over once I left! They even let me work on the farm as part of my payment when things were a little tight before med school (ironically I have far less $ now). They are the nicest couple and honestly I wish them SO MUCH success. Ive never had vegetables burst with so much flavor as theirs. I know I sound like I am selling them (well, yes I do think you should join their CSA) but its true. I converted many with a "Here just taste this!" and then shoving food at them. A few that really pop are the raspberries (OMG) that just melted in your mouth, to the sweet and super crisp carrots in 3 colors (I liked the purple the most) to the garlic that I bought the whole market supply of twice because it was so delicious. The fresh onions were crispy and sweet and the tomatoes made me jump up and down! I remember eating so many sungolds once that I got a tummy ache! And they have so many varieties of heirloom veggies (lots and lots of tomatoes). I especially loved how they would give us prewashed and baby salad mix! And the hon tsai tai... I impressed several people with that. They just didnt know that food could be so good without a bunch of sauce/seasoning/goop on it. I loved their eggs too. At one time I thought the price was a little high because I hadnt eaten eggs in 11 years... but now I wish I could pay <$4 for eggs again! </span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">FLORIDA</span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">CSA: <a href="http://fwcrcd.org/" target="_blank">Geraldson Community Farm </a></span><br />
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> This is my second year with this CSA. For the area this is the best produce you will find. Their </span><span style="background-color: white; color: #222222; line-height: 16px;"><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">jalapeños</span></span><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> are the spiciest you will find (OMG pickle them- delicious) and I love that they have a "U-pick" feature every week that ranges from earth boxes of herbs to peas to tomatoes to flowers! I will say though that if I was to compare This CSA to the one in Ohio... the Ohio one wins by a landslide in almost every facet: variety, flavor, variety, ease of pick up, variety and just general feeling. The Florida one wins in that I have access to it currently and it beats out most other produce available here by a lot. The Florida one seems really complicated to figure out, while the Ohio one was just a call and a check mailed. </span><br />

Named so because we did turkey day before everyone else! Clever,

without all of our friends bringing dishes! We had everything a

since then I have been craving comfy cozy foods. This is especially
difficult because I live in coastal Florida, which you know
definitely never feels cozy like a cool fall day. In my search, I
ended up on an english website where I saw this dish, albeit a much
simplified version. ANY new way to make common things is great in my
book. So I read the recipe... and promptly changed it to something
way delicious (at least to me).</span><br />

add-ins</b></span></div>
<div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> ½ cup
pumpkin puree -OR- ½ cup thawed and drained (squeeze the water out)
frozen spinach -OR- 2 teaspoons curry powder -OR- cooked diced
butternut squash -OR- cooked broccoli florets -OR- mashed roasted
garlic -OR- some sour cream... whatever you like!
</span></div>
<div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"><br />
</span></div>
<div style="margin-bottom: 0in;">
<u><span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Preparation</span></u></div>
<ol>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Heat
plenty of water in a pot over high heat, and add about 1 tablespoon
salt. Add cauliflower florets and turn heat down to medium and keep
boiling until florets are just fork tender. This took about 12 mins
for me, but check frequently.</span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Meanwhile,
add milk, bay leaves, and cloves to a small pot and heat over med
low until bubble just form. Don't over heat or the milk will burn to
bottom of pan, we just want to “marinate” it a bit. Right before
use, remove bay leaves and cloves.
</span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">When
cauliflower is done, pour into a strainer and allow to drain for a
few mins. You may now use the same pot for our next step... <i>(now
would be a great time to turn oven on to 375F)</i>.
</span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Heat
pan over medium heat. Add butter and allow to melt. Sprinkle in rice
flour and whisk to combine butter and rice flour. Next, sprinkle in
cornstarch and whisk to combine. Turn heat to low. </span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Whisking
the whole time, add the hot milk a little at a time until fully
combined. Now add the 12 oz cheese! </span></div>
<div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;"> *It should be about the consistency of a think pancake batter. If it needs thickening add cornstarch (1/2 tablespoon dissolved in 2 tablespoons of water, then add), and if it needs thinning, add more milk. </span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Add
mustard and worcestershire to our cheese sauce. Then add any
optional ingredients. I went with the pumpkin! Taste now and add any salt, pepper, or other seasonings. </span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Place
well drained cauliflower in oven proof dish, pour our delicious
sauce over it, making sure to get it into all the nooks and
crannies. Top with a bit of parsley, bread cubes, and additional 4
oz cheese.
</span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Bake
in our preheated 375F oven for about 25 mins, or until bread cubes
are toasty and cheese is melty.
</span></div>
</li>
<li><div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">Remove
from oven and let it set for 8-10 mins. Devour.</span></div>
</li>
</ol>
<div style="margin-bottom: 0in;">
<span style="font-family: Helvetica Neue, Arial, Helvetica, sans-serif;">TO
PALEOIFY aka make grain free: skip the rice flour and cornstarch and use potato
flakes to thicken milk just a bit. Also, obviously skip the bread.

I guess its been a couple years now. Things got in the way, work, study, school, new relationship, all awesome things but they took up time. Well... study and work paid off. I am now in med school year 2! Also, now engaged to a most wonderful person who makes me inadvertently smile all the time (D). More about those things later (I feel like I could write a book on these past two years)! </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;"> I have recently decided that it would be a great outlet to have something creative in my life, that can break up the endless hours of studying (okay I havent actually studied <i>hours</i> in about a week... but back to it tomorrow!). I remembered my old rusty food blog, with its mediocre pictures and Im-too-tired-and-not-creative-or-verbose-enough descriptions, and I had a glimmer of an idea. Maybe I could do a couple GOOD posts a month, and not stress about content or frequency? Use the blog for ME and if anyone loves it along the way... well thats just icing on the [gluten free] cake! I do hope some of you love, or at least like, the blog. If nothing else I hope you find it instructive in at least one thing. Extroverted and Socratic by nature, I hope nothing more than to bring smiles, joy and learning to myself and those around me! </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;"> The pictures may not be any better, and I am trying harder at making it worth reading a little but... its mine. Its mine and there may be others like it, but this one is mine. On to the recipe part...</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;"></span><br />
<a name='more'></a><span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Since about 6 months ago I can remember proclaiming to a friend at school mid conversation "Your parents have a curry tree?! OMGZ get me some please?" </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Well dear friends, that day finally arrived. I was stopped in the parking lot at school as said friend (okay Satish it was you) yelled from a lunch carpool "Hey I have your curry leaves!" then hastily drove off because a big scary truck was waiting behing them. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">A few electronic communications later, I has received my leaves. They were just waiting for me in the cafeteria... in an unassuming plastic bag. The plastic bag somehow made the curry leaves inside better by comparison. A regular old supermarket bag, filled with olfactory goodness! Okay I know they are just leaves but...</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">I havent had fresh curry in like 2 years! Mostly from not making it, then from unavailability in my corner of podunk, USA. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">I instantly knew what I would do. Shrimp and pineapple curry. I have made it a few times, each time from memory... so I cant guarantee that this time was the same as my first go around. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">It is delicious either way. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Directions: </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">1. Heat a large pot over medium heat, add 1 tablespoon coconut oil. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">2. Add onion and carrot to pot and fry until golden, about 5 min. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">3. Add garlic and saute about 3-5 mins more, stirring frequently.</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">4. Add all dry spices *except mustard seed*, fry for about 1 min (will be dry). Add coconut milk and tomato paste and stir to combine. Simmer for about 10 mins, or until carrots are almost cooked through. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">5. While curry is simmering, heat another tablespoon coconut oil in a pot or pan (with a lid!) over low-medium heat. When oil is heated, quickly add mustard seeds and fresh curry leaves and put lid on pot. You will hear mustard seeds sizzle and pop! After about 30 seconds of popping, stir. Cook another 30 seconds to 1 minute and remove from heat. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">6. Back to the curry mix... add pepper, pineapple, and shrimp. Warm through. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">7. Add mustard seed/curry leaves/ oil mixture into the curry pot. Stir to combine and allow to heat 1 more minute, just until the shrimp are warmed through. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">8. Serve over or along side spinach, <a href="http://nomnompaleo.com/post/1626071845/another-simpler-version-of-cauliflower-rice">cauli-rice</a>, or basmati rice. Garnish with cilantro and </span><em style="background-color: white; font-family: arial, sans-serif; font-style: normal; line-height: 16px;">jalapeño</em><span style="font-family: Arial, Helvetica, sans-serif;">. </span><br />

<span style="font-family: Arial, Helvetica, sans-serif;">- my new iPhone 4s (hand me down) takes better pics than my old digital camera...</span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- which leads me to crave one of those fancy DLSR cameras that I probably dont know how to use and certainly dont have the funds to buy... BUT THE PICTURES!!! Oy. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- The curry is the most beautiful shade of orange, I should have called it orange curry... that may get confusing though so I stuck with the main ingredients. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- I should get a proper light reflector, or maybe even a photo light box... that would be great. I fortunately dont need the blue filter anymore since I lost it. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- I should shoot during the daytime, natural = best light. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- Apparently photo editing matters not, as I decided cropping is too much work right now, so enjoy the backgrounds!!! </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;">- Even with all this I feel great having made three beautiful things: a beautiful meal, a happy D that said my dinner was delicious, and a nice blog post. </span><br />
<span style="font-family: Arial, Helvetica, sans-serif;"><br /></span>
<span style="font-family: Arial, Helvetica, sans-serif;">Until next time.</span>teegeehttp://www.blogger.com/profile/11898238807893932904noreply@blogger.com1tag:blogger.com,1999:blog-2696828483403221266.post-12982116249779644352010-06-09T20:22:00.007-04:002012-12-09T19:08:16.249-05:00Thai Inspired Salad of Awesome!<div align="center">

UPDATE: as of Dec 2012 all pics older than this post are deleted. This was unfortunately a terminal error and cannot be undone. I will be re-uploading the pics from the more frequently viewed posts but doing all of them would be too time consuming.<br />
I am sad. Lesson learned: dont delete Google+ albums!!! Oops. </div>

I attended an Iranian dinner party the other night. Hosted by Kali, all food prepared by Marjan (with a teeny help from Kali and I) and attended by many! Let me tell you the food was a-maz-ing! It was the perfect night to break in her newly decorated kitchen, more on my kitchen decorating later. Anyhow, the first reason I chose to make this dish at home was because it looked easier than the rest. The second was that because it was so tasty Marjan literally had to slap our hands away from the pan. She then hid the dish in the oven and when it was heating before guests arrived... I had to promise her not to eat it while she did her makeup. Basically I was a little child with my mommy telling me "No!". I like to think its a compliment of sorts, that Marjans cooking was so good that it took these extreme measures to keep us from devouring it all before guests arrived. You're welcome, Marjan. </div>
<div align="left">

<div align="left">
Anyway, one key ingredient that I don't actually own (gasp!) is <a href="http://en.wikipedia.org/wiki/Kashk">kashk</a>. I used sour cream instead, as it was the most similar thing I could attain. Kashk is fermented though, and I supposed Ill never really get that flavor in its true form without the kashk. Another thing that is important is that you try your hardest to get <a href="http://images.teamsugar.com/files/upl1/1/15259/40_2008/eggplant.preview.JPG">Japanese eggplant</a>. I have seen these types of eggplants in every kind of Asian ethnic store Ive ever visited. Indian, Chinese, Japanese... the eggplant is there. I made the dish once with regular eggplant and it was a bit different. If you cant get the Japanese variety, you can use regular eggplant, just add the saltwater soaking step. </div>

Anyhow here is the outline of the recipe as I remember it, and per Marjan's verbal notes:</div>

<strong><u>Kashk Bademjan via Marjan</u></strong></div>
<div align="left">
INGREDIENTS</div>
<div align="left">
1 lb ground beef preferably very lean (there will be plenty of other fat!)</div>
<div align="left">
4-5 Japanese eggplant, or 3 medium regular eggplants*, peeled and cut into roughly 3cm cubes</div>
<div align="left">
1 small onion, chopped</div>
<div align="left">
2-3 cloves garlic, minced</div>
<div align="left">
1 T turmeric</div>
<div align="left">
1/4 cup tomato paste</div>
<div align="left">
salt</div>
<div align="left">
1/4 c sour cream</div>
<div align="left">
dried mint</div>
<div align="left">
lard for cooking (or oil if you prefer)</div>
<div align="left">
<span style="font-size: 85%;"><span style="color: #666666;">*If you're using regular eggplant, you ll need a saltwater soak. Make some very salty water in a big bowl, add eggplant and cover with a plate. Weigh it down with a can or cup or something. You want all the eggplant to be submerged. After about 30 mins, drain and continue with recipe.</span> </span></div>
<div align="left">
</div>
<div align="left">
</div>
<div align="left">
<span style="color: white;">.</span></div>
<div align="left">
DIRECTIONS</div>
<div align="left">
1. In a large pan/pot/wok over medium high heat, brown ground beef well. Remove beef from pan and set aside.</div>
<div align="left">
2. Add to the pan the chopped onion. If there isn't enough fat left from the beef, add some lard. Brown the onion very well (see pic below). Add the garlic and cook for about 3-5 more mins, until cooked but not burned. Set aside with the beef (I just add it to one big bowl).</div>
<div align="left">
3. Add about 1/4 cup lard to the pan and let heat for a minute. Add all the eggplant and stir very fast until its all coated. </div>
<div align="left">
4. Add about 1/4 cup water to the pan and cover. The steam will help the egg plant begin to cook. When the water is almost gone, uncover and fry until the eggplant is very soft and brown, stirring every few mins. </div>
<div align="left">
5. Add the beef and onion/garlic mixture back to the pan, and add the turmeric and tomato paste. Stir to combine. You'll want to mash up the eggplant pieces a little too, just until they are a little smaller than bite size. I like mine a little chunky though traditionally it supposed to be a smooth, homogeneous mixture. Add sour cream. Salt to taste (about 1 t for me). </div>
<div align="left">
6. Spoon into serving dish and sprinkle with dried mint fried in a little oil. I like a lot of mint, but base it on your taste. Usually this is served with lavash bread (similar to pita... kinda) but since I don't eat bread (MOST of the time) I made some cauliflower chips to go with it.</div>

July 26-31, 2009. Meadowlark review.<h3><span style="font-family:arial;font-size:100%;color:#666666;">Here is what I ate tonight for dinner (this was all $20.09 for restaraunt week): </span></h3><h3><span style="font-family:arial;font-size:100%;color:#666666;">1. Spicy Shrimp and Watermelon with Basil, Mint and Nuoc Cham. </span></h3><h3><span style="font-family:arial;font-size:100%;color:#666666;">2. Harissa-brushed Swordfish with Sicilian Couscous (couscous, kalamata, sultanas, onion, tomato, parsley). </span></h3><h3><span style="font-family:arial;font-size:100%;color:#666666;">3. Roasted Peach with Blue Cheese, Sweet Balsamic Syrup and Dolcessa Gelato (nixed the bleu cheese). </span></h3><h3><br /><span style="font-family:arial;font-size:100%;color:#666666;">I was at the Meadowlark here in Dayton. Let me review for you. First course was good. Light and refreshing, though I feel the shrimp was not that good, but I always feel like that about shrimp. Seconds... the swordish was amazing! The couscous, was couscous. Well done, but not special. The fish was special though. Dessert was great. The peach was warm and I either got a balsamic reduction (probable) or a high quality balsamic. The flavor of it said to me that it was a reduction, and sweetened at that. The gelato tasted cream cheesy. I dont know what flavor it was supposed to be but it was def buttermilk or cream cheese or something of that nature. </span></h3><p><span style="font-family:arial;color:#666666;"><strong>I have never been to Meadowlark before, and I fear I did not experience the height of what the restaurant can offer. They were busy (on a one hour wait if you didnt call ahead... I did). The host who I spoke to on the phone and when I arrived was very kind and personable, probably the best part of the experience. I felt sort of rushed through the whole experience. I suppose for the onslaught of people they were experiencing, the restaurant fared very well. No overt mistakes were made, save one. They delivered my check to me before I had even received dessert. Way to P*** me off. Are you kidding me? I would consider this place somewhere in the upper band of Dayton dining, and you are acting like a Perkins or a Waffle House and not waiting until I am through with my meal? I mean really. THAT was why I felt rushed. You should let a diner FINISH their meal before you make them pay. Maybe the rules are different considering the time. I dont know. One piece of advice: wait until the end of the meal until bill is delivered please. </strong></span></p><p><strong><span style="color:#666666;"><span style="font-family:arial;">I might return to Meadowlark again. Sweet corny milk :)So this is <span id="SPELLING_ERROR_0" class="blsp-spelling-error">definetly</span> a 20% post. For those of you <span id="SPELLING_ERROR_1" class="blsp-spelling-error">wh</span> o have no <span id="SPELLING_ERROR_2" class="blsp-spelling-error">oide</span> what that means, it is basically "Ill do really well with my diet 80% of the time, and have some sweet snacks 20% of the time." <br /><br /><u><strong>Date/tamarind/hazelnut/coconut squares</strong></u><br />Add into a food processor:<br />about 15 dates<br />2 handfuls of hazelnuts<br />about 2 T <a href="http://www.thespicehouse.com/file/product/tamarind-product.jpg">tamarind paste</a> (available at <span id="SPELLING_ERROR_3" class="blsp-spelling-error">indian</span> or <span id="SPELLING_ERROR_4" class="blsp-spelling-error">latin</span> markets)<br />I added a pinch of cardamom, but you could leave that out or do anther spice.<br /><br />1. Blitz in food processor until <span id="SPELLING_ERROR_5" class="blsp-spelling-error">pastey</span>.<br />2. Sprinkle shredded, unsweetened coconut into a pie plate. Dump paste in there and flatten out to about 1 cm thickness. Sprinkle with more coconut.<br />3. Place in fridge overnight (or just until hardened).<br />4. Remove flattened and <span id="SPELLING_ERROR_6" class="blsp-spelling-error">coconutted</span> disk. Using a sharp chefs knife, slice into small squares (about 3/4 in square).<br />5. Use more coconut and toss the squares in the coconut, so it sticks to the cut sides.<br />6. Done! Store in fridge, lasts for a while.<br /><br /><a href="http://1.bp.blogspot.com/_6gApQBrKA7k/Sm8px_18tYI/AAAAAAAAAww/521lqMaNKzk/s1600-h/P7280039.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 300px; DISPLAY: block; HEIGHT: 400px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5363551620149589378" border="0" alt="" src="http://1.bp.blogspot.com/_6gApQBrKA7k/Sm8px_18tYI/AAAAAAAAAww/521lqMaNKzk/s400/P7280039.JPG" /></a><br /><div><a href="http://4.bp.blogspot.com/_6gApQBrKA7k/Sm8pxspwqmI/AAAAAAAAAwo/rilO0stwlIU/s1600-h/P7280040.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 300px; DISPLAY: block; HEIGHT: 400px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5363551614998194786" border="0" alt="" src="http://4.bp.blogspot.com/_6gApQBrKA7k/Sm8pxspwqmI/AAAAAAAAAwo/rilO0stwlIU/s400/P7280040.JPG" /></a><br /><div align="center"><a href="http://1.bp.blogspot.com/_6gApQBrKA7k/Sm8pxKavzUI/AAAAAAAAAwg/EPg4R4OVA7k/s1600-h/P7280041.JPG"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 300px; DISPLAY: block; HEIGHT: 400px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5363551605808418114" border="0" alt="" src="http://1.bp.blogspot.com/_6gApQBrKA7k/Sm8pxKavzUI/AAAAAAAAAwg/EPg4R4OVA7k/s400/P7280041.JPG" /></a> <a href="http://www.saveur.com/article/Food/Sweet-Corn-and-Milk-Drink">Sweet corn and milk drink</a>!
